Gimme S'more!

A few weeks ago I made s'more cupcakes and a few people asked about them and how to make them. So here we go!
I used the Martha Stewart recipe for the cake and frosting.

Yellow Cake:

Ingredients -
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup sugar
3 large eggs
1 1/2 teaspoons pure vanilla extract
3/4 cup milk

Directions -

1.STEP 1: Preheat the oven to 350 degrees. Line a cupcake pan with paper liners; set aside.
2.STEP 2: In a medium bowl, sift together flour, baking powder, and salt. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, one at a time; scrape down bowl, and beat in vanilla.
3.STEP 3: Add flour mixture and milk alternatively, beginning and ending with flour mixture.
4.STEP 4: Divide batter evenly among liners, about three-quarters full each. Bake until golden and tops spring back to touch, about 20 minutes, rotating pan once if needed. Transfer pans to wire cooling rack.

Chocolate Frosting:

Ingredients -
3 1/2 cups confectioners' sugar
1 cup Valrhona cocoa powder
12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
1/2 cup milk, room temperature
2 teaspoons pure vanilla extract

Directions -

1.STEP 1: In a small bowl, sift together the confectioners' sugar and cocoa powder. Add butter, milk, and vanilla; stir until smooth and free of lumps.

Decorations:
Crumble/crunch 10 graham crackers and rim the cupcakes with the crumbs.
Stick a Hershey bar and marshmallows on top of each cupcake. (I thought mini marshmallows would work best, but you can use the large ones as well)

Finished product:

Our weekend in pictures.

We are all in the middle of battling a cold in my house so this weekend wasn't too exciting.
Our Friday morning looked like this:
A sick babe in bed. It completely broke my heart to see her not feeling well, but that's what happens when mamas gotta work and baby has to be in daycare.

Friday night was spent laying on the couch waiting for Billy to get home and sending him obnoxious pictures like this:
Please note the pup in the background.

Billy had Saturday off (which NEVER happens) so we took advantage of it.

Our first stop was the farmers market:

Then we took the pup for a spa day. We call it a spa day, I'm pretty sure she classifies it as pure torture. She was not pleased when we picked her back up:

Nanna and Grampie took Abigail for a sleepover on Saturday night. So it was date night! Which actually ended up being a delicious dinner and then going home and passing out. Definitely lame city, but we are tired!
Before our eventful date night.

We also found this little nugget of joy on the side of the road on the way to dinner, so it wasn't a complete wash....

Sunday, billy was back to work and I hung at my parents house all day. We made a last minute decision to buy a blow up pool and have Abigail 'swim' for the first time:
I'm pretty sure she just thought she was in the bathtub. But we got cute pictures, so that's fine ;)

I think we wore her out though because the next two pictures is how she spent the rest of the day:

And that's all I've got.

Don't touch my child.

I consider myself to be a generally friendly person. Even to strangers. I always say my please and thank you's and will hold the door open for you if you need it. If a cashier tells a corny joke while I'm checking out, I'll laugh to make them feel good.

BUT DO NOT TRY TO TOUCH MY CHILD.

I grew a giant pair of lady balls yesterday while Billy and I were at the grocery store. We had just checked out, it was raining outside and Billy ran to the parking lot with the cart of groceries to come pick us up, so Abigail didn't get too wet. She was in her stroller/car seat and I was getting her strapped in under the covered walkway in front of the store. THEN IT HAPPENED. An older gentleman who looked like Santa Clause (the kind you find in the mall, not the North Pole) approached us and asked if we would like him to grab us a plastic bag to keep us from getting wet while walking to the car. Nice enough I thought. I declined and explained that my husband was grabbing the car to pick us up. And then out of nowhere he says 'I am going to
Bless your child by kissing my finger and placing it on her forehead'. Now, I'm not knocking any sort of religion or beliefs, that's not the point of this, however, coming up to a stranger and her daughter with a 6 pack of Natural Ice in your shopping bag and telling them that you are going to bless their child... Are you out of your MIND?!
I'm pretty sure the look I gave him was 50 shades of crazy and the words 'You will ABSOLUTELY not!' came flying out of my mouth before I could even process what was happening. I threw a blanket over the top of A-bomb's stroller and hauled ass, in the pouring rain to the car.

This brings me to the PSA portion of this post..... Do not try to touch another person's child unless you have permission. This may seem like common knowledge to most people, but clearly not to everyone. For crying out loud, my own parents still sanitize theirs hands EVERY. SINGLE. TIME. they touch my kid. And I KNOW they are clean.

I will leave you with these two things:

A cute picture of my babe-

And a cute-ish (except when trying to maul my face) picture of what we found in our backyard last night-

This was after her cub strolled by.
And when I say backyard, I mean if I had put my hand up to our porch screen, I could have to touched her... Given that she didn't decide my fingers looked like mini snickers bars and ate them one by one.

And that's all I've got. Just remember: DO NOT TOUCH MY CHILD.

NYC & a 2 month old.

Oh hey. I have a two month old now. And she looks like this:

I don't know if I'm really sad because she is growing too fast or really excited for her to be growing up and turning into a little person.

This past weekend, I was away from my girl for the first time. My mom, sister and I went to New York City for the weekend, a gift from my dad for my moms birthday in May.... it was a good gift, but I still win for life...I gave her a granddaughter on her birthday!! ;)

I had a complete breakdown leaving her Friday morning, but had a blast on the trip. Who would want to leave this face?!

Here's a recap of our trip:

We decided last minute at the airport to upgrade our seats to first class and BOY was that a good decision!! We each had our own little cubicles with beds as seats, got a full meal, hot towels, free drinks (YES, PLEASE) and free movies. It made the flight fly by and it was a perfect start to our weekend.

Our hotel was right in Times Square at the Marriott Marquis. So nice to walk out of the hotel and not have to take a taxi anywhere. Everything we needed was RIGHT there. Perfect!

This was the view from our hotel window:

As soon as we landed on Friday, we hit the city and started shopping (the sole purpose of this trip). We had a limited amount of time because we had a car service picking us up to take us to the Yankees/Orioles game that night.

The game was fun, the ice cream was better ;)

We left the game early for our very late (10:30pm) dinner reservations at Carmines, back in the city. It was so delicious and we ate and drank ourselves into comas.

Billy wins at sending me THE cutest pictures of Ab-racadabra while I was away. I DIED over this one:

Saturday was filled with more shopping and a little naked cowboy.

I'm pretty sure Saks 5th Ave. appreciated our business that day.

Saturday night we had Broadway tickets for Annie. It was SUCH a good show and we got to see Jane Lynch playing Ms. Hannigan. She was amazing!

We were coming home on Sunday afternoon, but we continued to spend the morning shopping around the city.

We landed in Orlando around 6pm and when we got home, I couldn't have run into the house faster to grab this little girl.. missed her SO MUCH!

Monday morning, I started Shakeology/Beachbody. I'm going to do a whole post about it soon, but in the meantime, I will tell you that I love it! The chocolate shakeo is delicious and the workouts are kicking my ass, in a good way!

Wednesday: this & that's.

Happy 4th of July week!

Abigail started daycare this week. I was a sad, sad mama. But I am SO happy I decided to start her a week before I go back to work. We decided to do it, because I'm a hot mess of emotions and I knew it was going to be tough. And it was. It down right sucked. I spent all day Monday cleaning my house.. (My floors have never been cleaner. I washed them with my tears ;) ) . Tuesday was better, but I still didn't want to leave her! But I'm making the most of our time apart while I'm still not working and getting things done around my house that I have been wanting to get done for a while....

Like paint a chalkboard wall: (this wall is in our front room, that we are transitioning into a playroom right now.. Post to come!)

Yard work: (Husband and I spent all day Tuesday pressure washing, mulching, weeding and planting... Such grown ups! ;) )

And making a new picture wall with our updated photos: (I'm obsessed.)

I've also been painting our master bathroom, but it's still a work in progress. Painting sucks. And I only like to do it when I have a beer sitting on the ladder with me.

And last but not least I received a much anticipated package in the mail yesterday: Out new Vonbon blanket! I'm in love with it. These blankets are 100% organic and handmade. They are the perfect mix of stretchy and soft fabric and Abigail loves to be swaddled in it! It's her new favorite blanket and I wish it came in a size that I could be swaddled in ;) I can't wait to stock up on some more Vonbon items soon!

I hope you all have a great forth weekend! Grab a bomb pop and light up a sparkler... This is 'MERICA!
